As reported previously, I am trying Jeff Novick’s Fast Food plan as an exercise in healthful cooking and time management. My main stumbling block has been the plan’s reliance on tomatoes. After a very helpful email from Jeff Novick I have been experimenting with various substitutes.
I am happy to report that Pacific Organic Low Sodium Vegetable Broth is an excellent alternative.
Last night I made a dinner with kidney beans, frozen vegetables, including carrots, broccoli, cauliflower, and collard greens. I cooked these in the vegetable broth and used powered curry for a spice. Served over rice it made an excellent meal, and, as promised, only took about ten minutes to prepare.
